Baked Mac N Cheese

Baked Mac N Cheese

  • 4 tablespoons organic smart balance (or grass fed butter)
  • 1 teaspoon seasoning salt
  • 3/4 teaspoon black pepper
  • 4 cups of milk
  • 1/4 cup cornstarch or arrowroot
  • 4 cups shredded cheese- reserve 1 cup
  • 16oz gluten free elbow pasta
Preheat your oven to 375. Boil pasta according to directions, but pull them out a minute before they are al dente. In a large sauce pan melt smart balance and add season salt & pepper. In a separate bowl whisk milk and corn starch till smooth. Stir milk mixture into melted smart balance and cook over medium till thickened- stir constantly. Once it's thickened remove from the heat and add 3 cups of cheese. Stir till melted. Toss with pasta and pour into a greased baking pan. *If you'd like a crunchy topping mix 1/2 cup of gluten free bread crumbs with 1tsp melted smart balance, 1/2tsp paprika.* Sprinkle remaining cheese over pasta and top with bread crumb mixture if desired. Bake for 20-30 minutes or until top is browned. Enjoy!
